With ample time at home due to the movement control order (MCO), it’s a great time for Malaysians to start learning to cook or to try out new recipes.
It’s no wonder the previous article on Top Five Quick And Tasty One-Pot Meals was a hit with readers. As such, here are five more easy Malaysian meals to make in your kitchen.
Chicken curry
1 kg chicken cut into small pieces
3 potatoes chopped into medium chunks
1 large red onion
4 cloves of garlic
2 inches of ginger
1 spring curry leaves
4 tablespoons of curry powder mixed in ½ cup hot water
4 tablespoons of oil
Cardomom, Clove, Star Anise and Cinnamon spices (optional)
Method
Blend the onion, garlic and ginger into a paste. Then heat the oil in a pan over medium heat and add in the spices (optional) before adding in the paste. Stir until fragrant, and the water has evaporated.
Add in the curry leaves and curry powder mixture and stir until well mixed. Add in the chicken and potatoes and mix well before closing the lid for 15 minutes.
Add coconut milk and water to your preference and let the curry simmer for another 15 minutes or until chicken is cooked and the potatoes have softened.
Chicken Rendang
Ingredients
1 whole chicken cut into small pieces
4 tablespoons of Roasted Coconut Flakes (Kerisik)
1 ½ cups of coconut milk
4 Kaffir lime leaves (daun limau purut)
½ cup cooking oil
Salt and sugar to taste
Spice Paste Ingredients
1 large onion
8 shallots
6 cloves of garlic
2 inches ginger
3 lemongrass stalks
10 dried chillies soaked and seeds removed
1 inch galangal (lengkuas)
Method
Blend the ingredients of a spice paste in a blender with a little water. Heat oil in a pan then add in the blended spice paste and stir until fragrant.
Add in the chicken and kerisik before mixing in the coconut milk and water, stir until chicken is almost cooked.
Add in the kaffir lime leaves and simmer in low heat with the lid closed for 30 minutes until chicken is tender and liquid has evaporated. Season with salt and sugar to taste.
Indian Mamak Mee Goreng
Ingredients
2 tablespoons of cooking oil
1 tablespoon of minced garlic
6 prawns (optional)
3 cubes deep-fried tofu cut into bite-sized pieces
1 packet of yellow noodles
1 potato boiled and cut into small pieces
2 large eggs
1 cup bean sprouts
50g Choy Sum
1 lime cut in half
2 tablespoons of soy sauce
2 tablespoons of sweet soy sauce
2 tablespoons of tomato sauce
Sugar to taste
Chilli Paste Mix
10 dried chilli soaked and seeds removed
1 tablespoon of cooking oil
Method
Blend the chilli paste mix with a tablespoon of water.
In a wok with high heat, begin cooking the prawns. Then add the chilli paste, sauces, noodles and toppings.
Chinese Fried Rice
Ingredients
2 cups of leftover rice
1 large sweet onion minced
2 cloves of garlic minced
½ cup frozen mixed vegetables
2 eggs beaten
1 tablespoon of Soy sauce
½ tablespoons of Sesame oil
Spring Onions for garnish
Method
Stir-fry the onions and garlic until golden then add the rice. Then add in the thawed vegetables.
As the rice cooks in the pan, make a large well in the centre to add in the whisked eggs. Scamble until curds form then mix well.
Add touches of soy sauce and sesame oil and cook until the rice starts browning.
Malay Prawn Noodles
250-300g yellow noodles
6 - 8 big prawns
5 tablespoons of tomato sauce
200g of diced tomatoes
2 cups of water
4 cloves of chopped garlic
2 onions sliced
1 tablespoon of light soy sauce
1 ½ tablespoon of chilli paste
Cooking oil
Sugar to taste
2 hard boiled eggs
1 lime cut in half
Fried crispy shallots (bawang goreng)
Method
Blanch the yellow noodle and set aside. Then, blend the diced tomatoes with the water to create a puree.
Stir fry the garlic until fragrant in two tablespoons of oil in a wok. Add the prawns and light soy sauce and stir fry for two minutes under low flame.
Mix in the tomato puree with the tomato sauce and chilli paste as you bring the gravy to simmer under medium heat, add in sugar to taste.
Add in the yellow noodles and mix well. Once cooked garnish with fried onions, eggs and lime.
